Pork is just about the perfect meat for barbequing and grilling. The meat's marbling keeps it moist during prolonged cooking.
Americans are not the only ones who love pork. There are plenty of fabulous dishes from Mexico, The Caribbean, Indonesia, Europe and China. This recipe will get you ready to go hog wild on the grill!
Stir up the barbeque sauce and get ready to make the perfect ribs
You need:
- 2 to 3 slabs baby back pork ribs (about 4 pounds)
- Kosher salt
- Freshly ground black pepper
For the sauce:
- 2 cups apple cider (preferably organic without high fructose corn syrup or other unhealthy additives)
- 1/4 cup minced shallots
- 1 tablespoon minced jalapeno pepper (seeds removed)
- 1/4 ketchup
- 2 tablespoons white wine vinegar
- 2 tablespons tomato paste
- 1 tablespoon dark brown sugar
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
To make the sauce
Combine apple cider, shallots and jalapeno in a small sauce pan. Bring to a boil, cook for about 15 to 20 min. over medium high heat until 1 cup of the liquid remains. Add the remaining ingredients, stir gently, bring to a boil and remove from the heat.
This sauce also can be made ahead of time and refrigerated until ready to use.
Let the ribs stay at room temperature for 20 to 30 min. before grilling. Season generously with salt and pepper. Grill, rib side down, over Indirect Medium heat until the meat is very tender and has pulled back from the end of the bones - about 1-1/2 to 2 hours.
Indirect grilling on a gas grill can be accomplished by preheating the grill to high with all burners. Then, if you have a two-zone grill heat one side at medium-high and the other side off. Place your meat on the off side. If using a three-zone grill, adjust the two end burners to medium and the middle off. Place the meat in the middle zone.
Baste the ribs frequently with the sauce throughout the grilling time, but stop basting during the last 10 min.
Remove from the grill and allow to rest for 5-10 min. before slicing into individual servings. Serve warm and enjoy.

Yum! These look awesome. I'm bookmarking them (rated it up) b/c I can NEVER grill well and this sounds so simple. I'm looking forward to trying them.
